I use gitlab for a lot of things. It's a bit OTT for most things but being able to link the code repo to it and then reference issues in commits is handy. Some clients have their own systems (usually either basecamp or trello).

What's your budget? Do you know ideal spec? If it's just apache and postfix it won't need to be a big VPS, unless you wanted to run rspamd/spamassasin too.

I've considered this a few times, either IPv6 only or using a shared IPv4 in addition to full IPv6. From discussions on here there wasn't masses of interest but I imagine it's something that might increase over time?
